Hop Variety Guide
Here's my horribly biased opinion and experience with hop varieties I've used.
Admiral Smells like a cross between Target and Challenger. Pretty mild, don't get much of anything from it, not bad though.
Adeena Pretty mild, similar to Hallertauer or Fuggles like the description says. Good in the British stuff.
African Queen Similar to Topaz, fairly potent. Light pine with a weird fruit flavour. Decent hops, nothing special though.
Ahtanum Only used once, pretty mild. Supposed to be cirusy.
Amarillo Good, pretty potent, tastes like the white pithy part of a grapefruit, kind of harsh but nice.
Apollo Great, pretty potent, super dank with some citrus. Goes well in an IPA, will use again.
Archer Pretty mild, might have slight citrus and floral to it, hard to tell. Very good though.
Azacca Pretty potent. Tastes like Amarillo or Centennial to me, kind of harsh and pithy but good if that's your thing.
Barbe Rouge Pretty mild, slight fruitiness. Not bad though, nice lager hop.
Belma Pretty mild, slight light fruitiness. In large amounts it has an unpleasant bitterness and weird licorice flavour. Not a fan.
Boadicea Very mild, possibly typical British earthiness. Not bad.
Bramling Cross Tried to like it but just tasted weird. Has an interesting black current flavor, fairly potent. Will not use again
Bravo Works well as a bittering hop, smells great. Should probably experiment with these as a late addition.
Bru-1 Very mild. Nothing special, wouldn't go out of my way to get these. No offensive flavours, just generic mild hoppiness.
Caliente Only used once, pretty mild. Aroma is fantastic though, very fruity but that's about it. Too bad the flavor wasn't there. Won't buy again.
Callista Medium potency, has a generic fruity flavour that's kind of boring on it's own. Not bad, would be worth pairing with something else.
Calypso Very mild, kind of disappointing. Was mildly fruity, probably a good bittering hop if it was cheap. Won't buy again.
Cascade Staple hop every brewer should have in their freezer. Very nice grapefruit citrus flavor, pretty potent.
Cashmere Fairly mild. Kind of disappointing, had an odd flavor that I'm not crazy about. Won't use again.
Centennial Another staple hop, kind of in between Cascade and Amarillo, has really nice citrus grapefruit flavor with a bit more attitude. A tad sharp, pretty potent.
Challenger Excellent British hop, use it mostly for bittering but has a nice orange peel flavor used late. Fairly potent, best combined with something else.
Chinook Intense pine, very potent stuff. Really good in an IPA if you like that sort of thing. I use sparingly to add some bite to a fruity hop bill. Sawdust City Lone Pine IPA has lots of this in it.
Citiva Fruity with strong resin, very potent. Not bad but a touch piney for me.
Citra Makes everything awesome, very potent. Very distinctive flavor and aroma, citrus, fruity, and a touch of cat pee which I oddly kind of like.
Columbus Awesome dual purpose hop, very dank and resinous aroma and flavor, pretty potent. Excellent clean bittering hop as well with high alpha.
Comet Like a wild version of Cascade crossed with some Centennial and Amarillo, very nice and lots of citrus. Pretty potent.
CryoPop Fairly potent. Aroma stronger than flavour. Good flavour, but could use some help. Tasted like a new experimental version of familiar IPA hops. Probably best mixed with other hops like Citra/Simcoe.
Crystal Similar to Hallertauer but spicer, really nice in lagers. Pretty mild.
Denali (Sultana) Super good, very potent. Tastes like pineapple and pine, excellent IPA hop.
Dr. Rudi Fairly potent, mostly soft pine with some NZ/Australian fruity flavors to it. Not bad, would go well with something fruitier.
East Kent Goldings Awesome, very floral hop, fairly potent. Not too keen on it as a dry hop, but excellent in anything British.
Eclipse Awesome, very fruity, fairly potent. Made an IPL with these that was great, smells like peaches, tastes like sweet oranges. Similar to Galaxy and Sabro.
El Dorado Medium potentency, has good flavor if you use a lot. Kind of fruity and sweet. Tastes like licorice to me if you use too much.

Elixir Pretty potent. Reminds me of Equinox with added weirdness. Not a fan. Lives up to the Leather/Tobacco flavours in the description.
Ella (Stella) Pretty mild. Subtle fruityness but follows with a lingering bitterness that's a bit harsh and makes things taste more bitter than they are. Not a fan.
Endeavour Fairly potent. Has a firm bitterness like Chinook that's not harsh. Hard to describe flavour, mostly British with a bit of North American to it. No black current like the description. Fades with time. Good hops.
Enigma Pretty potent, a lot of tropical fruit that reminded me of Mosaic or Citra but not as dank. Faded over time. Nice modern type hop, would use again.
Equinox Very unique and super potent. Tastes like green peppers which is nice in small amounts but is easily overdone. Not crazy about this one.
Eureka Pretty potent, mostly resinous with some of that weird black current flavour Bramling Cross has. Sharp bitterness. Not a fan.
Exp 07270 (Altus) Fairly potent. Tastes very dank like weed, not bad on it's own but needs some company to shine.
Falconer's Flight Super good blend of Simcoe, Citra, and some of the 'c' hops. Great for using solo in an IPA style beer. Citrus and pine, very potent.
Fantasia UK blend, fairly mild. Only used an ounce in a stout and couldn't pick out any of the caramel it's supposed to have. Not bad though.
First Gold Is pretty mild like most British hops but I quite like this one. Does have a slight orange marmalade taste to it.
Fuggles One of my favorites, pretty mild. Use it in everything, nice and earthy flavor that rounds out any beer, especially British stuff.
Galaxy Very fruity, pretty potent. Lovely tropical fruit flavors and a peachy aroma.
Glacier Got an ounce for my Birthday (thanks Dave), with only one ounce I couldn't tell what it had to offer in the kitchen sink beer I made with it.
GP75 British Leaf hops, pretty mild. Light generic fruitiness which is nice. Not bad at all. Very different for a British hop.
Hallertau Blanc Not bad, sort of mild. Little bit of wine characteristic, is good if you can get it cheap.
Hallertau Mittlefruh Milder than Saaz, pretty standard pilsner flavor, a little spicy. Very nice.
HBC 472 Fairly potent. Totally tastes like coconut and vanilla. Crazy unique, pairs wonderfully with darker styles. Excellent hops.
Helga Pretty mild. Used in a kitchen sink lager that was good.
Herkules Completely tasteless but that's not a bad thing. Would be a great clean bittering hop, nice and smooth.
Hersbrucker Fairly mild. Very nice lager hop, herbal with a little bit of floral.
HopShots Works as described, nice clean bitterness with no hop particles. Tends to be so smooth it tastes less bitter than you're used to at the same IBU.
Hort 9909 Kind of mild. Think it was similar to Topaz with some pine and fruitiness. Was good.
Huell Melon Smells pretty good but very mild. Kind of disappointing, has a bit of mild fruit. Won't buy again.
Idaho 7 Smells resinous but tastes like fruity candy. Pretty potent. Can be bad if overdone. Not terrible.
Jarrylo Very mild. Possibly fruity? WLP007 easily over powered any flavor from the hops. Not bad though.
Kohatu Very nice, fairly potent. Tastes like pineapple and pine needles combined, very fruity. Not common.
Lemon Drop Pretty mild and disappointing. Had a stale flavor first time I used it, better second time but nothing special. Won't use again.
Liberty Only used once, pretty mild but good. Typical lager hops.
Loral Pretty mild. Good hop, light floral with some fruitiness. Wouldn't go out of my way to get more.
Lotus Pretty mild. Has a sharp bitterness and not much flavour. Not bad but not worth the effort, wouldn't use again.
Lumberjack Pretty mild but very nice. Good lager hop. Touch of pine to it.
Mackenzie Pretty potent. Nice and hopppy, kind of a cross between equinox and galaxy with a bit of dank mixed with green pepper. Very nice, would use again.
Magnum Super clean bittering hop, has hardly any aroma. Good the few times I used it.
Mandarina Bavaria Pretty Mild. Tastes slightly fruity but nice. If you can get them cheap, they're a good subtle hop.
Medusa Nice light fruitiness. Sort of potent, not a super stanky IPA hop but does well in an American style pale ale. Good stuff but wouldn't go out of my way to get it.
Meridian Decent, pretty mild. Light fruit with a bit of pine/resin. Weren't terrible but wouldn't go out of my way to use again.
Mistral Pretty mild, slightly floral. Has a mild astringency to the bitterness. Nothing special.
Monroe Pretty mild, light fruitiness. Not bad though.
Mosaic Very nice, smells like blueberries but flavor has a different fruitiness with a touch of pine or citrus. Pretty potent.
Motueka Fairly potent, tastes slightly odd and oniony unfortunately. Not horrible but won't use again.
Mount Hood Excellent lager hop. Nice crisp and spicy similar to Hallertauer or Crytstal.
Nelson Sauvin Super unique, seriously tastes like white wine and grapes, very fruity. Pretty potent.
Northdown Tastes like nothing, nice and clean as a bittering hop though.
Northern Brewer Pretty mild but nice. Used as a bittering hop forever when I started. Nice refreshing mild minty flavor when used later. Similar to Perle.
Nugget Good bittering hop, pretty mild flavor. I use it in darker beers for a touch of herb and spiciness.
Olicana Smells British, like Target. Not much flavour.
Opal Really mild, was nice in a kitchen sink lager.
Orbit Really mild, kind of disappointing. Had a mild generic hoppy flavor and aroma. Not worth it, won't buy again.
Pacific Gem Not great, has a weird current flavor kind of like Bramling Cross. Fairly potent. Won't buy again.
Pacific Jade Very smooth bittering. Not terribly potent, no pepper as advertised. Need to overdo this one next time and add a big dry hop.
Pahto Smells nice, early taste tests weren't great but was better after time. Very mild, better suited to use as a bittering hop. Generic hoppy flavour.
Palisade Smells like Fuggles a bit, nothing offensive. Very mild, typical British flavor and aroma with some apricot fruityness, very nice. Don't over do this one.
Perle Pretty mild, very light mint flavor. Nice and clean though. Similar to Northern Brewer.
Pilgrim Fairly mild, not bad but lots of better hops out there. Left a kind of stale flavor in everything I made with it. Mildly citrusy.
Phoenix Terrible, even as a bittering hop leaves a harsh stale metallic flavor. Smells like Target a bit.
Polaris Love this stuff in a stout. Very herbal minty flavor and aroma. Pretty potent and super high alpha.
Progress Not great, pretty mild. Couldn't pick out any flavor specifically but wasn't good. Smells nice in the package though.
Relax Super mild, next to no flavor, supposed to taste like tea. Wasn't bad but won't use again.
Saaz Surprised myself with this one, super good. Fairly mild but adds that little spicy note you get in a good pilsner that's instantly recognizable.
Sabro Fantastic. Very potent. Tastes like sweet oranges, a new favorite.
Saphir Fairly potent. Very interesting fruityness, excellent in lagers to change things up a bit from the normal noble hop flavours.
Sasquatch Good, fairly potent. Used in a steam beer and they were very similar to Northern Brewer. Nice woody herbal flavour.
Sequoia Fairly potent. Not bad, reminds me of the South African Hops, light fruityness, bit of pine, some astringency.
Simcoe One of my favorites, very potent, dank, resinous, piney but not harsh. Has a hint of that cat pee flavor that I like.
Southern Passion Similar to African Queen and Topaz, some odd fruityness with a touch of resin instead of pine. Bit harsh on the tongue. Kinda meh.
Southern Star Best of the three South African hops. Fairly potent. Nice round fruit flavour similar to the others without the pine. Not bad, but kinda meh.
Sorachi Ace Very unique, very potent, lemon and dill flavors. Have a Muskoka Detour and you'll see exactly what it tastes like.
Southern Cross Pretty mild, smells like Bramling Cross. Not great, mostly unpleasant bitterness with no flavor. Not a fan.
Spalt Pretty mild, typical noble hop flavours. Good stuff.

Strata Fairly potent. Nice soft sweet tropical fruit flavours. Good IPA/Pale ale hop. Good stuff, would use again.
Strisselspalt Smells really herbal like black tea, not terribly potent flavor wise but it's there. Tasted way more bitter than anticipated, not a fan.
Styrian Goldings Same as Fuggles, excellent, pretty mild. I rotate between it, Fuggles, and Willamette constantly.
Summit Stuff I've had is gross, onion and garlic city. Could have been a bad batch but not trying again any time soon. Pretty potent. Won't buy again.
Sylva Only used once, pretty mild but good. Typical lager hops.
Talus (HBC 692) Fairly potent. Dank with some fruityness, touch of apple and some tartness. Not bad, very unique.
Target Harsh and pretty potent. It's good as a bittering hop but wouldn't use late. Has a distinctive smell.
Tettanger Kind of mild. Spicy though, nice if you want to add some bite to a lager. I prefer Hallertauer but very nice.
Topaz Medium intensity. Has that typical Australian fruitiness to it but mostly grassy pine, soft with some astringency. Not bad.
Vic Secret Pretty potent. One batch I got was awesome, very similar to Citra. Next two batches were very resinous and astringent which sucked.
Vista Pretty potent. Had in a Sawdust city smash beer. Mostly resin and pine, little bit of fruit. Was not too harsh or aggressive though.
Waimea Onion and garlic city, was most likely a bad crop. Has nice tangerine flavor behind the grossness. Used as a bittering hop successfully to dispose of it.
Warrior Super clean bittering hop. Never played with late additions, probably pretty mild.
WGV Only used once, pretty mild. Wasn't bad though, might be good to get if it was cheap. Supposed to be close to EKG.
Willamette Excellent fuggles type substitute, pretty mild. Good in everything except hop bombs where it would get lost. Earthy tasting.
Zamba Pretty potent. Generic fruitiness, pretty good. Wouldn't go out of my way to get it.

Simcoe One of my favorites, very potent, dank, resinous, piney but not harsh. Has a hint of that cat pee flavor that I like.
Southern Passion Similar to African Queen and Topaz, some odd fruityness with a touch of resin instead of pine. Bit harsh on the tongue. Kinda meh.
Southern Star Best of the three South African hops. Fairly potent. Nice round fruit flavour similar to the others without the pine. Not bad, but kinda meh.
Sorachi Ace Very unique, very potent, lemon and dill flavors. Have a Muskoka Detour and you'll see exactly what it tastes like.
Southern Cross Pretty mild, smells like Bramling Cross. Not great, mostly unpleasant bitterness with no flavor. Not a fan.
Spalt Pretty mild, typical noble hop flavours. Good stuff.

Strata Fairly potent. Nice soft sweet tropical fruit flavours. Good IPA/Pale ale hop. Good stuff, would use again.
Strisselspalt Smells really herbal like black tea, not terribly potent flavor wise but it's there. Tasted way more bitter than anticipated, not a fan.
Styrian Goldings Same as Fuggles, excellent, pretty mild. I rotate between it, Fuggles, and Willamette constantly.
Summit Stuff I've had is gross, onion and garlic city. Could have been a bad batch but not trying again any time soon. Pretty potent. Won't buy again.
Sylva Only used once, pretty mild but good. Typical lager hops.
Talus (HBC 692) Fairly potent. Dank with some fruityness, touch of apple and some tartness. Not bad, very unique.
Target Harsh and pretty potent. It's good as a bittering hop but wouldn't use late. Has a distinctive smell.
Tettanger Kind of mild. Spicy though, nice if you want to add some bite to a lager. I prefer Hallertauer but very nice.
Topaz Medium intensity. Has that typical Australian fruitiness to it but mostly grassy pine, soft with some astringency. Not bad.
Vic Secret Pretty potent. One batch I got was awesome, very similar to Citra. Next two batches were very resinous and astringent which sucked.
Vista Pretty potent. Had in a Sawdust city smash beer. Mostly resin and pine, little bit of fruit. Was not too harsh or aggressive though.
Waimea Onion and garlic city, was most likely a bad crop. Has nice tangerine flavor behind the grossness. Used as a bittering hop successfully to dispose of it.
Warrior Super clean bittering hop. Never played with late additions, probably pretty mild.
WGV Only used once, pretty mild. Wasn't bad though, might be good to get if it was cheap. Supposed to be close to EKG.
Willamette Excellent fuggles type substitute, pretty mild. Good in everything except hop bombs where it would get lost. Earthy tasting.
Zamba Pretty potent. Generic fruitiness, pretty good. Wouldn't go out of my way to get it.
